Spicy Vegan Chickpea Nuggets


Sometimes all you need is some spicy vegan chickpea nuggets. I am not the biggest fan of imitation meat, but this simple ingredient recipe is designed for happiness and is great for kids (or pretending to be one).

For this recipe, you will need a food processor and a pan. You will start by creating ingredients that will be set aside and used later to get the right consistency. Once that is complete, processing the nuggets begins. Below, mine is still a little too liquid-y, so I added a little bit more of the oat flour to thicken it to the point where it did not stick to my hand. 

Pro tip: Don't forget to take the blade of the processor out before balling the nugs! Learn from my mistakes.

I use my hands and create small to medium sized balls and dip them into the baked bread crumbs. After baking, serve with your choice of condiment and enjoy. Double or triple the recipe if you have more than two people eating.

Spicy Vegan Chickpea Nuggets

Yield: 2 servings

Prep time: 5 minutes

Total time: 35 minutes

Ingredients

Chickpeas | 1 (15 oz) can, liquid reserved

Breadcrumbs | .5 cup

Rolled Oats | .5 - .75 cup depending on consistency

Garlic Powder | 1 tsp

Paprika | 1 heaping tsp

Crushed Red Pepper flakes | 1 tsp

Black Pepper | .5 tsp

Directions

1. Preheat oven to 375 degrees and grab a pan.

2. Place the breadcrumbs onto the pan and place into the oven until golden brown (about 5-10 minutes). Set aside to cool.

3. Put the maximum amount of rolled oats into a food processor and process into a flour. Put the flour into a bowl and set aside.

4. Drain the chickpeas over a large measuring cup to retain the liquid to be used later. Then add the chickpeas to the processor with the spices and process until crumbly.

5. Use a fork to whisk the chickpea liquid and add about .25 cup of the liquid to the food processor. Also add about .5 cup of flour and process. If the mixture is too liquid, add more of the flour. If too thick, add more of the chickpea liquid.

6. Once desired consistency is reached, use hands to create balls. Dip the balls into the breadcrumbs to coat. The mixture should create about 10 chickpea nuggets.

7. Bake for 20 minutes until crispy.

8. Enjoy!
