Red Pepper Hummus

Chickpeas can be made into many different dishes, including chickpea nuggets, falafel, and hummus. Hummus can be a great addition to sandwiches or served as a snack. For this Roasted Red Pepper Hummus, I use 2 red peppers, roast them using my Roaated Red Pepper Recipe which will be posted separately. Then I add the remaining ingredients and blend until an even consistency. If you have a way to peel skins from the chickpeas, it will be easier to create a smoother texture, but it is still a great recipe without that step.  Please like, share, and follow for more content! Day 547...Plant Based Sausage Review

I had a few hotdog buns leftover last week, so when I went to the store, I decided to find something that could go in them. I found this Simple Truth Plant Based Sausage and decided to try it. Based on the packaging, it may be better suited in a pasta or breakfast scramble, but I only had a few buns left and this pack came in 4. To cook it, I cut it in half and placed it in a pan over medium heat and cooked until it started to sizzle and brown. I put it in a toasted bun to try it. The texture was nice. It had the right amount of crunch to chewy. The flavor was reminiscent of a sausage though it's been many years since I've had one. I could taste the paprika and spices which I liked.  Overall, I thought this product was good for the price and the flavor that came from it. I would definitely try putting it in a pasta or cooking it into other recipes.

Baked Hummus Pasta

You've heard of the viral Baked Feta, right? Well what about Baked Hummus Pasta. Instead of Feta, you substitute hummus. I used garlic hummus because it's one of my favorites. I also blended the cherry tomatoes with the hummus and spices to create a more consistent texture. You can skip blending if you want the crushed tomato texture. This recipe makes between 2 - 4 servings depending on how hungry you are.
