Cheezy Chickpea Quesadillas

Quesadillas make a quick lunch, but normally are not very filling. I decided to make my own quesadilla with enough protein to keep me full until my next meal. I created this Cheezy Chickpea Quesadilla recipe which features 17 grams of protein per quesadilla from a combination of chickpeas and cashews. 

I create the filling by making my own cheese sauce using cashews which I thicken on the stove. Then I add the salsa and chickpeas and create a mash. I store that filling for up to a week. After the filling is made, it only takes a few minutes to create this meal.

Cheezy Chickpea Quesadillas

Ingredients

Tortillas | 10

Cashews | 3/4 cup

Vegetable Broth | .5 cup

Almond Milk | .5 cup

Nutritional Yeast | 3 tbsps

Flour | 3 tsps

Apple Cider Vinegar | 1 capful

Paprika | 1 tsp

Black Pepper | 1 tsp

Garlic Powder | 1 tsp

Salsa | 1/2 cup

Chickpeas | 1 15 oz can, drained

Directions

1. In a small pot, add cashews and 1 - 2 cups water. Bring to a boil and allow the cashews to soak in the boiling water for 20 - 30 minutes.

2. After boiling the cashews, add cashews and everything else except the salsa and chickpeas to a blender and process until smooth.

3. Pour the sauce into the small pot and heat over medium heat. The sauce should thicken after about 5 minutes. Add additional flour if not thickening.

4. Pour the cheese sauce into a bowl and add salsa and chickpeas. Mash with a fork until even consistency leaving some whole.

5. In a sauce pan, heat a cooking spray or olive oil over medium heat and add the first tortilla. Put in the filling and put another tortilla on top. Flip once the bottom tortilla beings to turn brown or black, depending on your preference. 

6. Repeat until all tortillas have been used or store the filling in the fridge for up to 1 week and make a quesadilla daily.
