Baked Hummus Pasta

You've heard of the viral Baked Feta, right? Well what about Baked Hummus Pasta. Instead of Feta, you substitute hummus. I used garlic hummus because it's one of my favorites. I also blended the cherry tomatoes with the hummus and spices to create a more consistent texture. You can skip blending if you want the crushed tomato texture.

This recipe makes between 2 - 4 servings depending on how hungry you are. I made it as a 2 serving dish, but almost didn't finish because it was so filling.

Baked Hummus Pasta  

Yield: 2-4 servings
Prep time: 20 minites
Total time: 30 minutes

Ingredients

 Pasta Noodles  | 1 box 

Cherry Tomatoes | 1 container 

Hummus | 1/2 container  

Olive Oil | 1 tbsp  

Nutritional Yeast | 2 tbsps

Italian Seasoning | 1  tsp

Black Pepper | 1 tsp

Basil | for serving

Directions

1. Preheat oven to 400.

2. Add tomatoes and olive oil to a baking dish and bake for 30 minutes.

3. Bring a pot of water on to boil and cook noodles according to directions.

4. After the 30 minutes, add everything else except noodles and bake another 5 minutes.

5. Add baked ingredients to a blender and blend until smooth. 

6. Top noodles with sauce and garnish with additional red pepper flakes and basil.

7. Enjoy!
