Vegan Chickpea-Ball Sub

Need a vegan version of the Subway Meatball Sub? I've got you covered with this Vegan Chickpea Ball sub with marinara sauce and vegan parm. These "meatballs" are made from basically 100% chickpeas because it contains canned chickpeas and Banza rice (made from chickpeas). Banza rice cooks faster than normal rice, and I enjoy the extra nutritional value. These can be made with other kinds of rice as well, but you'll want to cook the rice before starting this recipe. 

This recipe can make 4 large sandwiches or 8 half ones. I serve the meatballs with heated marinara sauce, toasted bread, and a little bit of my vegan parmesan.

Vegan Chickpea Ball Sub 

Yield: 4 big subs or 8 small subs
Prep time: 5 minutes
Total time: 45 minutes

Ingredients

Chickpeas | 1 15 oz cqn

Banza Rice | 1 cup uncooked

Tomato Paste | 4 oz

Nutritional Yeast | 1/4 cup

Paprika | 1 tsp

Italian Seasoning | 1 tsp

Black Pepper | 1 tsp

Marinara | for serving

Vegan parmesan | for serving

Directions

1. Cook rice according to directions. 

2. Put rice, chickpea, paste, and spices into a food processor and lightly process allowing pieces of the mixture to stay intact. 

3. Preheat oven to 375. 

4. Use your hands to ball up the mixture and place on a baking sheet. This normally makes 16 balls.

5. Bake for 35 minutes. 

6. Then broil on low for 3-5 minutes to make the edge crispy. 

7. Serve with toasted bread, warmed marinara sauce, and vegan parm.

8. Enjoy!
