Vegan Lasagna Roll Ups

Let's make lasagna, but rolled up for this Vegan Lasagna Roll Up recipe. It is more fun that traditional lasagna, and I think it tastes better in rolled form though you are welcome to disagree.  I start by cooking the veggies that will go into the lasagna. If you prefer to use different veggies or add to this, please do, but you will want to reduce the number of zucchini and carrots so that you have the same total amount of veggies. I use my own Ricotta Cheese recipe which is linked below and combine that with the veggies to make the filling. Then I take the mostly cooked lasagna noodles and add the cheese and veggie blend. I roll the noodles when they are mostly cooked because they will continue to cook in the oven, and I do not want to risk overcooking and getting mushy or disintegrating noodles. Vegan Rice and Bean Casserole

Casseroles are one of my favorite things to make because there is little that you have to do besides mix the ingredients into a baking dish. This Vegan Rice and Bean Casserole is no different. It takes less than 30 minutes to make, and each serving has over 20 grams of protein because of the beans and Banza Rice. If you use a different kind of rice, you may need to adjust the cooking time as Banza Rice only takes a few minutes to go from uncooked to cooked. As you can see below, all I did was add the ingredients to a dish. Spicy Cauliflower Bites

Even though game nights might look a little different this year, having a spicy snack to eat does not have to be. These Spicy Cauliflower Bites are perfect for your game viewing pleasures. And since parties may be a bit smaller, this recipe only makes 2 servings, so there will not be any leftovers to worry about heating up. I start making this recipe by cutting the cauliflower and stirring them into the wet ingredient mixture. Then I use bread crumbs to coat the wet cauliflower before placing them on a baking dish. I do not have a set amount of bread crumbs that will be used at this step. I start by putting enough on a plate to slightly cover it and then when I notice areas that have spots where I can see the plate, I add more bread crumbs.  After baking the bread crumbs for 30 minutes and flipping halfway through, I serve with my favorite dipping sauce. Cheezy Chickpea Quesadillas

Quesadillas make a quick lunch, but normally are not very filling. I decided to make my own quesadilla with enough protein to keep me full until my next meal. I created this Cheezy Chickpea Quesadilla recipe which features 17 grams of protein per quesadilla from a combination of chickpeas and cashews.  I create the filling by making my own cheese sauce using cashews which I thicken on the stove. Then I add the salsa and chickpeas and create a mash. I store that filling for up to a week. Vegan Parmesan

Store bought vegan parmesan has never been tasty enough for me. This two ingredient Vegan Parmesan is better than any store bought that I have tried and adds a little bit of protein to the meal. The cashews for this recipe do not need to be soaked and is better with completely dry ingredients. It just takes a little bit in a food processor until desired consistency is reached. 15 Minute Garlic Pasta

I love garlic and include it in most of my recipes, and it is no different with pasta. I have not found the perfect jar of garlic marinara sauce for an easy pasta dish, so I decided to make my own.  I normally use Banza chickpea pasta noodles for added protein, but I saw a sale on Kroger's Simple Truth Red Lentil and Quinoa pasta and decided to try it out. I cooked the noodles according to directions and drained them. Then I used the same pot on medium heat to combine a package of garlic hummus and a jar of marinara sauce. I stir until combined which normally takes about 5 minutes. Then I top the noodles with the pasta sauce and enjoy.  This is a easy and quick meal that can be easily modified by adding veggies or spices to make it your own. Tomato Soup and Cheezy Bread

My friend gave me tomatoes from their garden, so I decided to attempt my first ever tomato soup. Of course you can't have soup without some crunchy bread, so I picked up some ciabatta rolls from the market. My first attempt was a success, so here's another great recipe to rotate in for soup season: Tomato Soup with Cheezy Bread.   This recipe is simple and quick to make with the longest part being the tomatoes cooking in the oven. They bake for 20 minutes, but while it is baking you season the bread and add it to the oven to bake simultaneously. Once the tomatoes are done, the remaining soup ingredients go into a blender until smooth. Vegan Jalapeño Poppers

I have been using Kroger pick-up for most of the pandemic because it minimizes interaction. For one of my recent orders, I asked for 1 jalepeño, and instead I received 1 pound of jalepeños. Obviously that meant I needed to find a way to use them with ingredients I already had in my house, and that's how I created Vegan Jalepeño Poppers.  I start by making the vegan cream cheese. Then I cut and see the jalepeños. If you want your poppers to be less crunchy, then I suggest baking the jalepeños for 10 - 15 minutes to soften them. I like mine crunchy, so I filled the raw jalepeños with the vegan cream cheese. I used a spoon and tried to fit as much as possible so it would be even throughout the jalepeño.  Next comes breading the jalepeños.
