Vegan Nachos

In time for the Super Bowl this weekend, I am releasing my Vegan Nachos Recipe. Nachos are easily modified, and I expect I will post other combinations in the future because switching out ingredients can make a big difference. However, this attempt is perfect for this weekend's game. I use my queso batch and a can of refried beans, chips, and even zucchini to make this delicious recipe.  Please like, share, and follow for more content! Vegan Queso

In the vegan world, potatoes + carrots + cashews = something like cheese. I used these ingredients plus a few others to make my form of vegan queso.  I start by dicing some potatoes and carrots. I add the potatoes, carrots, and cashews to a pot to boil until fork tender. Then I strain them and add them to a food processor with the remaining ingredients.  Once blended, this makes a delicious, spreadable queso sauce that is perfect as a dipping sauce, for nachos, or with a little bit of vegetable broth, it can be made into a mac and cheeze sauce.  I anticipate making other varieties of queso as I continue to develop my cooking skills, but this will be my first Vegan Queso recipe.  Please like, share, and follow for more content! Easy, Vegan Sandwich

Sometimes I do not feel like cooking a new recipe or having something elaborate for meals, and that is okay. For this Easy, Vegan Sandwich I took a trip to Trader Joe's and picked out a few things that I thought would go together. Ciabatta bread is my favorite Trader Joe's bread, so I decided to use that as the base. I also bought a veggie patty, vegan bruschetta sauce, and vegan kale pesto. Garlic and Herb Pizza Dough

Friday nights are usually pizza nights for me. I order from a local pizza shop around the corner. However making it at home saves money and can be fun, so I created this Garlic and Herb Pizza Dough for days when I can't make it to the pizza place or if I want a fun activity.  I use fast rise yeast for this recipe because it saves on time by not waiting on the water and yeast to mix. Instead you can take fast rise yeast and mix it together at one time. If you have traditional yeast, you can mix the warm water and yeast and let sit according to the directions.  After mixing the ingredients, I knead the dough for 5 minutes until it can be stretched without breaking.  Then I let the dough rise for at least an hour. I rolled mine out into a rectangle and added homemade pizza sauce from another one of my posts. Homemade Pizza Sauce

I am a firm believer that if you can make it homemade, you should. Usually it tastes better and you can control what ingredients go into it. This Homemade Pizza Sauce is super simple with just a few ingredients and the spices can be modified to your own preference.  All you have to do is add the ingredients together and stir until combined. I made mine a little bit spicy by adding additional Crushed Red Pepper, however if you don't like spicy then leave that out.  Please like, share, and follow for more content, and please let me know how you like it! Sheet Pan Veggies

I have seen a lot of Sheet Pan Veggie recipes on my feed lately, so I thought I would jump on the trend and make my own variation.  I used my favorite veggies - broccoli, red potatoes, carrots, and added some chickpeas -  in a little bit of oil and mixed in some spices.  Then I baked them for 20 minutes covered. I flipped halfway through and baked for an additional 20 minutes uncovered until they were nice and crispy.  I chose to serve my veggies with garlic bread however it would be good on its own or with some rice.  Which veggies would you use in your own sheet pan recipe? Vegan Zucchini Casserole

I love zucchini, and I love casseroles in the winter. I mixed together my special molé sauce and created a colorful Vegan Zucchini Casserole! Because I used whole vegetables and bulk quinoa, little to no waste was created in the preparation of this meal. If you do not have access to fresh veggies or time to prepare them, canned or frozen equivalents should work just fine.  With these colorful ingredients, this recipe looks like a masterpiece. Feel free to serve with avocado or don't use cheese if that's your style.  I start making this recipe by cooking the quinoa. While the quinoa is cooking, I cut the veggies.  Once the quinoa is ready, I mix all of the ingredients, except cheese, together in the baking dish. I top with cheese and cilantro and bake for 30 minutes in foil. Vegan French Toast

I am the type of person that eats the same breakfast every day - usually cheerios or yogurt. However, on the weekend, I like to switch it up. This Vegan French Toast recipe only takes about 15 minutes to make and can be served with any of your favorite toppings, like powdered sugar, peanut butter, berries, or syrup.  To make this recipe, all you need to do is mix the ingredients, except bread, into a wet mixture and prepare a pan. I dip one side of the bread into the mixture for a few seconds and then flip it.
