Red Pepper Hummus

Chickpeas can be made into many different dishes, including chickpea nuggets, falafel, and hummus. Hummus can be a great addition to sandwiches or served as a snack. For this Roasted Red Pepper Hummus, I use 2 red peppers, roast them using my Roaated Red Pepper Recipe which will be posted separately. Then I add the remaining ingredients and blend until an even consistency. If you have a way to peel skins from the chickpeas, it will be easier to create a smoother texture, but it is still a great recipe without that step.  Please like, share, and follow for more content! Day 547...Plant Based Sausage Review

I had a few hotdog buns leftover last week, so when I went to the store, I decided to find something that could go in them. I found this Simple Truth Plant Based Sausage and decided to try it. Based on the packaging, it may be better suited in a pasta or breakfast scramble, but I only had a few buns left and this pack came in 4. To cook it, I cut it in half and placed it in a pan over medium heat and cooked until it started to sizzle and brown. I put it in a toasted bun to try it. The texture was nice. It had the right amount of crunch to chewy. The flavor was reminiscent of a sausage though it's been many years since I've had one. I could taste the paprika and spices which I liked.  Overall, I thought this product was good for the price and the flavor that came from it. I would definitely try putting it in a pasta or cooking it into other recipes.

Baked Hummus Pasta

You've heard of the viral Baked Feta, right? Well what about Baked Hummus Pasta. Instead of Feta, you substitute hummus. I used garlic hummus because it's one of my favorites. I also blended the cherry tomatoes with the hummus and spices to create a more consistent texture. You can skip blending if you want the crushed tomato texture. This recipe makes between 2 - 4 servings depending on how hungry you are. Vegan Crunchwrap

Need a meal to cook for mom this weekend? Or want to recreate Taco Bell's Crunchwrap and veganize it as a fun activity? These Vegan Crunchwraps are a perfect activity or meal to make for mom. My mom requested these Vegan Crunchwraps when I visited her last weekend, so it seems like the perfect mother's day recipe to post.  I love the flavor in these Vegan Crunchwraps, and they can be modified with whatever things you want to add or substitute. My main protein for this recipe is taco seasoned black beans. I used Kroger's Simple Truth Plant based sour cream, then added the black beans. I used my Vegan Cheeze Sauce mixed with Pace salsa. Then I added mashed Sweet and Spicy Chili Doritos which are by far my favorite accidental vegan food. Lastly, I added lettuce before folding it together. Roasted Cauliflower Tacos

These Roasted Cauliflower Tacos are easy to make. The roasted cauliflower is paired with my homemade salsa and my spicy vegan ranch recipe. I will be posting these recipes separately, but I have included the info here too since I can't link them yet.  I start this recipe by cutting up a head of cauliflower and adding a little bit of olive oil, salt, and pepper. I then bake the cauliflower for about 40 minutes at 400. I know they are done when the edges of the cauliflower are turning brown but not burnt yet. While the cauliflower is cooking, I make the salsa and the spicy vegan ranch in my Vitamix. I have 8 oz blending bowls, so it is easy to make a small portion of both the salsa and ranch. When the cauliflower is done, I constructed my tacos. I used Mission tortillas, then added the roasted cauliflower and topped with salsa and vegan ranch. Zucchini Quinoa Boats

In honor of Cinco de Mayo this week, I'll be posting a few Mexican inspired dishes. The first one is Stuffed Zucchini which uses molé as a secret ingredient. I would describe molé as having a hint of sweet chocolate, so it adds a little bit of sweetness to the dish. Strawberry Lemonade Popsicles

First recipe to be released from my strawberry picking adventures - Strawberry Lemonade Popsicles. I tried to make the ingredients as simple as possible, so the ingredients are just strawberries, lemon juice, and water. Because they have water, they freeze more as an flavored ice instead of a true popsicle. I do not add sugar which makes them fairly sour, so feel free to add 1/2 cup of sugar if you want them a little bit sweeter. These are great warm weather snacks or desserts, and can be modified in a lot of ways depending on the fruit combination that you want to use. Day 546... Southern Belle Farm

Last weekend I visited Southern Belle Farms to go strawberry picking. It's about a 1 hour drive south from my place in Atlanta. You pay by the gallon before entering the farm. It is a little pricey, but once you get the bucket, you can put as many strawberries that you find in it. In terms of dollars for strawberries, a store bought package is probably cheaper, but this was definitely a fun experience. I went up and down a few aisles looking for the best strawberries.  After I had my bucket filled, I visited the store which had some ciders, strawberry goods, and some strawberry themed gifts. I decided against buying anything, but I think the strawberry cider would have been a good purchase.  Now that I have all of these strawberries, you might ask what I'm going to do with them?
