Sour Cream and Chive Mashed Potatoes

Image
Who doesn't love Mashed Potatoes? It turns my favorite veggie into a smooth and flavorful mixture. This easy Vegan Sour Cream and Chive Mashed Potato recipe makes about 6 servings in less than 30 minutes. My process includes boiling the mostly peeled potatoes until tender then mashing to my desired consistency. Next, I add the remaining ingredients and combine. This is great as a side dish for meals or as a topping for shepherd's pie which might be coming soon to my blog.   Please like, share, and follow for more content! Day 543...Recess

Image
Going to a restaurant can be enjoyable especially now that the weather is warming up and patios are fully opened. I decided to try a new restaurant called Recess which has a lot of vegan options listed. Recess is located as part of Krog Strong Market and has lots of outside seating which is nice since we are still in a pandemic.   This restaurant is essentially two in one. Their menu has Recess on one side and Bar Mercado on one side. Bar Mercado doesn't have a lot of vegan options but it does have some. I tried one item from Bar Mercado and one item from Recess. From Bar Mercado, I ordered the below tapas called Roasted Cauliflower. It came in a spicy garlic sauce, and it was extremely yummy. It wasn't as crispy as I would expect roasted cauliflower, but I wouldn't have changed anything of it.  After the tapas, I ordered the My Farro Lady bowl which included Farro, roasted broccoli, spaghetti squash, pesto, and more. It was super tasty and a much larger porti...

Quinoa Veggie Burger

Image
Making my own veggie burgers may be my favorite pass time right now. I am experimenting with different bean and grain combinations. I created a black bean patty first, but I wanted to keep trying different combinations to make the perfect veggie burger. This quinoa and kidney bean one might be my new favorite.  I make this veggie patty using quinoa, kidney beans, tomato paste, flax seed, and spices. With my other burger I cooked them in a pan on the top of the stove. For this variation, I decided to try baking them to see if they could get extra crispy, and it worked. I served my Quinoa Veggie Burger on a roll with ketchup and Miyoko's PepperJack style slices made from oatmilk. This was my first time trying the Miyoko's style slices, and they were fantastic! They did not melt as well as I would have liked, but the taste was spot on and went very well with my burger. Please like, share, and follow for more content! Vegan Nutella

Image
Homemade products are almost always better than store bought in my opinion. Store bought nutella is not vegan, so it is not even an option for me to buy.  So when I saw hazelnuts in the bulk section at Sprouts, I knew I had to make my own. I looked up a few variations on Pinterest, but I did not see one that I wanted to try. I attempted to make my own based on what I thought would work well together. I used hazelnuts, cocoa powder, maple syrup, coconut oil, and almond milk to create this vegan nutella. It is best stored in the fridge, and it goes well on sandwiches or as an ingredient in my mug cake recipe. Please like, share, and follow for more content! And let me know how you like this recipe! Vegan Nutella Yield:  1 batch Prep time:  10 minutes Total time:  25 minutes Ingredients Hazelnuts |  1 cup Cocoa Powder |  3 tbsps Maple Syrup |  3 tbsps Coconut Oil |  1 tbsp Almond Milk |  1/4 - 1/2 cup Salt |  to taste Directions...

Vegan Burritos

Image
My first time eating a burrito was this week. Another vegan food blogger posted a beautiful burrito photo, and I decided it was time to try one. I've had tacos and burrito bowls and such, but never a burrito sized tortilla and the traditional burrito fold. It definitely took me a few tries to get the fold right.  I used Banza rice with beans and corn. I used my Vegan Cheeze Sauce recipe, and I used vegan sour cream, salsa, and lettuce to tie the burrito together.  Please like share and follow for more content! Vegan Burritos Yield:  6 burritos Prep time:  5 minutes Total time:  25 minutes Ingredients Banza Rice |  1 packet Corn |  1 can Black Beans |  1 can Tortillas  |  6 Cheese Sauce |  1 batch for serving Lettuce | for serving Vegan Sour Cream |  for serving Salsa |  for serving Directions 1. Cook rice according to directions.  2. Add beans and corn to the rice and heat through. 3. Take a tortilla and...

Vegan Cheeze Sauce

Image
Vegan Cheeze Sauce is a staple for many recipes - mac and cheeze, quesadillas, enchiladas, nachos, burritos, etc. There are store bought versions, but I like making my own version to save money and know exactly what is in it.  With less than 10 ingredients, this recipe is simple. It takes about 30 minutes to make and most of that time is the cashew soak time.  Please like, share, and follow for more content! And let me know how you like this recipe! Vegan Cheeze Sauce Yield:  1 batch Prep time:  20 minutes Total time:  25 minutes Ingredients Cashews, Raw |  3/4 cup Almond Milk |  1 cup  Nutritional Yeast |  1/4 cup Flour  |  1 tbsp Paprika |  1 tsp Black Pepper |  1 tsp  Garlic Powder |  1 tsp Apple Cider Vinegar |  1 capful Directions 1. In a small pot, cover cashews in water and boil for 20 - 25 minutes.  2. After soaking, add all ingredients to a high speed blender and combine. 3. Enjoy! ...

Green Pesto Pasta

Image
I actually only recently discovered pesto. Since then, I can't get enough of it. I went to the store and bought as many fresh and green veggies as I could find and paired them with a chickpea flour noodle and pesto to create this Green Pesto Pasta recipe. I topped the dish with a little bit of vegan mozzarella to make it extra cheezy.  I have now tried pesto on pizza, sandwiches, and pizza. What else do I need to try with pesto?? Please like, share, and follow for more content! And please let me know if you try this recipe. Green Pesto Pasta Yield:  5 servings Prep time:  15 minute Total time:  35 minutes Ingredients Chickpea Pasta Noodles |  2 boxes Pesto |  1 batch   Broccoli |  1 head, chopped Zucchini |  1 medium, diced Asparagus |  10 spears, chopped Green Beans |  1 cup, chopped Peas |  .5 cup  Vegan Cheezs |  for serving Directions 1. Day 542... Olive Bistro

Image
Living in Atlanta, I have access to a lot of restaurants within walking distance of my condo. There are not a ton of fully vegan restaurants that I love near me, but there are a few places that have good vegan options. One of the new ones that I tried recently was Olive Bistro. They have quite a few vegan options or items that can be the made vegan. Their menu is very large which definitely gives me some choice paralysis. My first time going, I tried a few different sides to try things out. I got a side of falafel, hummus, and Greek potatoes. The falafel was fantastic. It was crisp and flavorful and the tahini was great. I think this is good competition for my favorite falafel place Aviva's. Aviva's still has the best falafel in Atlanta, but Olive Bistro may be a runner up. The hummus was served with pita that seemed to be grilled or something that made it crispy and almost like a chip. The pita was definitely good and maybe my favorite pita. The Greek potatoes were also great....
