Strawberry Lemonade Popsicles

First recipe to be released from my strawberry picking adventures - Strawberry Lemonade Popsicles. I tried to make the ingredients as simple as possible, so the ingredients are just strawberries, lemon juice, and water. Because they have water, they freeze more as an flavored ice instead of a true popsicle. I do not add sugar which makes them fairly sour, so feel free to add 1/2 cup of sugar if you want them a little bit sweeter. These are great warm weather snacks or desserts, and can be modified in a lot of ways depending on the fruit combination that you want to use. Day 546... Southern Belle Farm

Last weekend I visited Southern Belle Farms to go strawberry picking. It's about a 1 hour drive south from my place in Atlanta. You pay by the gallon before entering the farm. It is a little pricey, but once you get the bucket, you can put as many strawberries that you find in it. In terms of dollars for strawberries, a store bought package is probably cheaper, but this was definitely a fun experience. I went up and down a few aisles looking for the best strawberries.  After I had my bucket filled, I visited the store which had some ciders, strawberry goods, and some strawberry themed gifts. I decided against buying anything, but I think the strawberry cider would have been a good purchase.  Now that I have all of these strawberries, you might ask what I'm going to do with them? Vegan Chickpea-Ball Sub

Need a vegan version of the Subway Meatball Sub? I've got you covered with this Vegan Chickpea Ball sub with marinara sauce and vegan parm. These "meatballs" are made from basically 100% chickpeas because it contains canned chickpeas and Banza rice (made from chickpeas). Banza rice cooks faster than normal rice, and I enjoy the extra nutritional value. These can be made with other kinds of rice as well, but you'll want to cook the rice before starting this recipe.  This recipe can make 4 large sandwiches or 8 half ones. Vegan Nutella Mug Cake

Sometimes when I cook sweets, I do not want leftovers. This Vegan Nutella Mug Cake is the perfect one serving dessert that can be made on an as needed basis with stuff I normally have on hand. It combines oat flour, peanut butter, nutella, maple syrup, almond milk, vanilla, and baking powder. Then it goes in the microwave for 70 seconds. Day 545... My 100th Instagram Post

Giving myself flowers today because I made my 100th Instagram post! In honor of my 100th post, here are 10 things about me: 1. My favorite food to cook is pasta (any kind).  2. I highly dislike onions, so you'll never see them in any of my recipes/posts. 3. I love to go hiking and backpacking. 4. Top 3 restaurants are: Aviva's by Kameel, Sunflower CafĂ©, and Atwood's Pizza. 5. I like routines - I eat Atwood's Pizza almost every Friday while I catch up on shows. 6. I am a dog person, but don't own any (except the family dog). 7. I'm looking forward to doing a series on creating recipes with fruits/veggies that I've never tried. 8. Baked Cauliflower Mac and Cheeze

I went to a craft fair this weekend, and I stumbled upon a booth called Copper Tree Pottery. There were beautiful spoon holders, bowls, mugs, and these 8 inch baking dishes. I found this white one with speckled spots and loved it so much that I bought it. Since purchasing it Saturday, I've already made two dishes in it with one of them being this Baked Cauliflower Mac and Cheese.  This recipe is perfect for families where eating veggies is hard or for a healthy side dish. The dish is mostly cauliflower with just a couple of servings of noodles, but you can't tell. It seems like 100% pasta when you're eating it. It also uses my Vegan Cheeze Sauce and then is topped with bread crumbs and baked until golden.  It makes between 2 - 4 servings depending on how you want to serve it. Sour Cream and Chive Mashed Potatoes

Who doesn't love Mashed Potatoes? It turns my favorite veggie into a smooth and flavorful mixture. This easy Vegan Sour Cream and Chive Mashed Potato recipe makes about 6 servings in less than 30 minutes. My process includes boiling the mostly peeled potatoes until tender then mashing to my desired consistency. Next, I add the remaining ingredients and combine. Day 543...Recess

Going to a restaurant can be enjoyable especially now that the weather is warming up and patios are fully opened. I decided to try a new restaurant called Recess which has a lot of vegan options listed. Recess is located as part of Krog Strong Market and has lots of outside seating which is nice since we are still in a pandemic.   This restaurant is essentially two in one. Their menu has Recess on one side and Bar Mercado on one side. Bar Mercado doesn't have a lot of vegan options but it does have some. I tried one item from Bar Mercado and one item from Recess. From Bar Mercado, I ordered the below tapas called Roasted Cauliflower. It came in a spicy garlic sauce, and it was extremely yummy.
